  • 3 Eggs, Beaten
  • 1 cup Vegetable Oil
  • 2 cups Sugar
  • 3 cups Grated Zucchini
  • 2 teaspoons Vanilla
  • 3 cups Flour
  • 1 teaspoon Salt
  • 3 teaspoons Baking Soda
  • 2 Tablespoons Lemon Zest
  • 1 teaspoon Baking Powder

Directions

    Preheat oven to 325 F.

    In a large bowl, combine eggs, oil, sugar, zucchini and vanilla. Mix together lightly but well.

    In a separate bowl mix together the flour, salt, baking soda, lemon zest and baking powder.

    Blend dry ingredients into the batter. Pour into 2 greased loaf pans.

    Bake at 325 F for 50-60 minutes or until a toothpick pulled out of the center comes out clean. Do not over bake, it will make the loaf tough.
