- 3 Eggs, Beaten
- 1 cup Vegetable Oil
- 2 cups Sugar
- 3 cups Grated Zucchini
- 2 teaspoons Vanilla
- 3 cups Flour
- 1 teaspoon Salt
- 3 teaspoons Baking Soda
- 2 Tablespoons Lemon Zest
- 1 teaspoon Baking Powder
Directions

1Preheat oven to 325 F.

2In a large bowl, combine eggs, oil, sugar, zucchini and vanilla. Mix together lightly but well.

3In a separate bowl mix together the flour, salt, baking soda, lemon zest and baking powder.

4Blend dry ingredients into the batter. Pour into 2 greased loaf pans.

5Bake at 325 F for 50-60 minutes or until a toothpick pulled out of the center comes out clean. Do not over bake, it will make the loaf tough.
