Lemonade Scones

Ingredients

  • 3 cups self-raising flour
  • 1 cup lemonade
  • 1 pinch salt
  • 600 milliliters cream thickened
  • 1 tablespoon white sugar
  • 1 dash vanilla extract
  • strawberry jam

    Preheat fan-forced oven to 220 degrees celcius

    Sift self-raising flour and salt into a large mixing bowl. Create a well in the centre and add the lemonade and 1 cup of thickened cream

    Mix ingredients with a knife until all ingredients come together

    Turn your dough out onto a lightly floured surface, and knead slightly until smooth

    Cut scones into rounds using a scone cutter, or the open end of a glass cup and arrange closely on a greased tray or baking paper

    Bake in an oven for 10 - 15 minutes or until golden on top

    To make the cream, add the remainder of the thickened cream, sugar and vanilla extract to a mixing bowl and whip until firm

    Top halved scones with jam and cream. Enjoy!
