Ingredients
- 3 pints small beets
- 1 12 cups vinegar
- 1 cup sugar
- 1 teaspoon pickling salt
- 2 tablespoons pickling spices (size of golf ball)
Directions

1Boil beets until tender.

2Peel in cold water.

3Drop into hot sterilized jars.

4Boil brine for 1 minute.

5Pour over beets and seal.

6Note: I usually put spice in a tea ball and discard the spice after boiling.
