  • 2 tablespoons olive oil
  • 2 shallots medium, peeled, minced
  • 2 cloves garlic
  • 1 package asparagus
  • 1/2 lemon
  • pepper
  • parmigiano reggiano cheese about 1/2 cup

Directions

    Working in batches heat 1 tbsp olive oil with half of the minced shallots and garlic in a large saute pan on medium heat until aromatic, about 1 min
  2. 2
    Add half of asparagus to pan. Cook, turning, until tender and slightly browned, about 5 min. Transfer to a platter, repeat with remaining oil, shallots, garlic and asparagus
  3. 3
    Squeeze lemon over asparagus. Season with salt/pepper; sprinkle with cheese
