  • 4 boneless skinless chicken breasts, thawed
  • 13 cup fresh lemon juice
  • 14 cup olive oil
  • 2 tablespoons finely chopped red peppers (optional)
  • 1 tablespoon Dijon mustard
  • 2 large garlic cloves, finely chopped
  • 12 teaspoon salt
  • 14 teaspoon pepper

Directions

    In a shallow dish, combine lemon juice, oil, red pepper, mustard, garlic, salt and pepper, reserving 1/4 cup.

    Pour remaining marinade over chicken and refrigerate for at least 20 minutes.

    Preheat grill to medium or preheat broiler.

    Pace chicken on grill or rack of broiler pan.

    Baste with reserved marinade.
