- 5 lb Idaho potatoes; peeled
- 8 garlic bulbs
- 2 lemons
- 3/4 oz mint; chiffonade
- 2 stick butter; cubed
- 1 cup heavy cream or milk
- 1 salt and pepper
Directions

1Cover potatoes and garlic with cold water.

2Bring to a boil.

3Add salt.

4Cook until fork tender.

5Drain.

6Return to pot on high heat for 30 seconds to remove excess moisture.

7Add butter, cream, the zest and juice of both lemons, salt, and pepper.
