- 12 lb lentils
- 4 ounces bacon, chopped
- 2 celery ribs, sliced
- 1 large carrot, diced
- 12 large onion, diced
- 1 large potato, diced
- 1 12 teaspoons salt
- 4 cloves, ground
- 6 cups water
- 2 tablespoons olive oil
Directions

1Dice the onion and cook with the chopped bacon over medium low heat until the onion is soft and the bacon is lightly brown.

2spoon off excess bacon fat.

3Add the lentils, carrot, celery, salt, ground cloves, olive oil and water, bring to a simmer, cover and cook for 1 hour.

4Add the potato and simmer 25 minutes.
