Ingredients
- 4 garlic cloves
- 2 medium onions, chopped
- 1 small jalapeno pepper, minced
- 1 Tbsp. olive oil
- 3 c. lentils
- 6 c. water
- 2 tsp. cumin
- 1 large red or green pepper
- 1 tsp. sugar
- 2 tsp. chili powder
- 1 tsp. paprika
- 1/2 tsp. allspice
- 1/2 tsp. thyme
- 1/4 c. tomato paste
- 1 small can V-8 or tomato juice
- 2 Tbsp. vinegar
- 2 stalks celery, chopped
Directions

1Saute garlic, onions and hot pepper in olive oil.

2Add lentils, water and spices.

3Simmer 25 to 30 minutes in a covered pot until lentils are tender.

4Add tomato paste, juice, vinegar, sugar, red or green pepper and celery.

5Add salt and additional water, if needed.

6Simmer 15 to 20 minutes, until vegetables are tender.

7Serve plain, over rice or pasta.
