Lentil Peasant Soup

Ingredients

  • 7 c. water
  • 8 chicken bouillon cubes
  • 1 c. lentils
  • 1 c. brown or wild rice
  • 1 c. chopped onion
  • 2 15 oz. cans diced tomatoes
  • 1 c. chopped carrot
  • 1 c. chopped celery
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 1/2 tsp. cumin
  • 1/2 tsp. curry
  • 5 garlic cloves
  • 1/4 c. cider vinegar
  • Salt and pepper

Directions

    Place all ingredients except vinegar, salt and pepper

    in soup pot and simmer covered for 45 minutes, stirring occasionally. Add the cider vinegar; season with salt and pepper.

    Thin with water or chicken broth as desired.
