- 1 lb. lentils
- 1 c. sun-dried tomatoes, coarsely chopped
- 1 c. walnuts, coarsely chopped
- 1/2 c. onions, finely chopped
- 1 tsp. salt
- 4 cloves garlic, finely chopped
- 1/2 c. vinegar
- 1/4 c. oil
- 1/4 c. chili powder
- 2 tsp. oregano
Directions

1Soak and cook lentils according to package directions.

2Drain and add other ingredients while still warm.

3Stir.

4Let sit for twenty minutes, so the tomatoes have time to soften and absorb some of the liquid before serving.

5This keeps well.

6I bring this to potluck dinners because it is safe unrefrigerated for hours and there are always people who appreciate a low-fat selection.
