Ingredients
- bones from baked ham
- 2 1/2 qt. cold water
- 2 Tbsp. salt
- 1 small clove garlic
- 8 to 10 peppercorns
- 1 medium onion, sliced
- 1 c. celery leaves
- 1 bay leaf
- 4 sprigs parsley
- 1 1/2 c. quick cook lentils
- 2 c. diced carrots
- 1/8 tsp. pepper
Directions

1Place bones in a large kettle. Cover with water.

2Add salt. Tie garlic, peppercorns, onion, celery leaves, bay leaf and parsley in cheesecloth bag. Skim fat from broth.

3Add lentils. Cover and cook over medium heat for 30 minutes. Add diced carrots and pepper.

4Continue cooking for 30 minutes or until carrots and lentils are tender.

5Yields 6 servings.
