  • 2 c. or 1 lb. lentils, soaked in cold water, washed and drained
  • 1 small onion, minced
  • 1 thin slice garlic
  • 1/2 c. margarine
  • 2 Tbsp. chopped parsley
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 3 qt. cold water

Directions

    Saute margarine with onion, celery and garlic.

    Add parsley, salt and pepper.

    Add water and simmer for 2 hours.

    Add 1/2 pound ham shank, if desired.
