- 1 cup Basmati Rice
- 1-1/2 cup Coconut Milk
- 1/2 cups Water
- 1 cup Black Beans, Fully Cooked
- 1/4 cups Cilantro, Chopped
- 2 teaspoons Fresh Lime Juice
- 1 teaspoon Salt, Or To Taste
Directions

1In small saucepan bring rice, coconut milk and water to a boil. Once it boils, reduce heat to low, cover and cook for approximately 15 minutes, stirring occasionally.

2When rice is very sticky and only a little bit of liquid remains, stir in the black beans. Continue cooking the rice until all the liquid has been absorbed and rice is cooked through.

3Remove from heat and stir in cilantro, lime juice and salt.
