- 5 c. chicken broth (canned)
- 3 c. water
- 1 1/2 c. lentils
- 2 lb. can crushed tomatoes
- 3 carrots, cut up
- 1 onion, chopped
- 1 stalk celery, chopped
- 2 garlic cloves, minced
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1/4 tsp. thyme
- 1 bay leaf
- 1/2 c. minced parsley
- 2 Tbsp. vinegar
- salt and pepper
Directions

1In a heavy pot combine broth, water, lentils, tomatoes, carrots, onion, celery, garlic, basil, oregano, thyme and bay leaf.

2Bring to boil and simmer covered for two hours.

3Stir in parsley, vinegar and salt and pepper to taste.

4Discard bay leaf. Thin soup, if desired, with water or chicken broth.
