- 3 chopped carrots
- 1 chopped onion
- 3 cloves minced garlic
- 1 bay leaf
- 1 tsp. thyme
- 3/4 lb. chopped potatoes
- 1 tsp. coriander
- juice of half lemon
- 1/2 lb. spinach
- grated Parmesan or Romano cheese
Directions

1Place lentils in water with salt and cook over medium heat for about 1/2 hour (while preparing vegetables).
