  • 3 1/2 c. water
  • 1 (16 oz.) can whole tomatoes (undrained), chopped
  • 2 large onions, chopped
  • 1 c. dry lentils, soaked and drained
  • 2 carrots, cleaned and chopped
  • 1/2 c. fresh parsley, chopped
  • 2 ribs celery, cleaned and chopped
  • 2 Tbsp. olive oil
  • 1/4 c. dry sherry (optional)
  • 1/4 c. pearled barley
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried marjoram
  • 1/2 tsp. black pepper

    In stockpot combine all ingredients and simmer 45 minutes or until lentils are tender.
