  • 2 large onions, chopped
  • 2 medium carrots, scraped and chopped
  • 1 c. dry lentils
  • 1/2 c. parsley, chopped
  • 16 oz. can whole tomatoes (undrained), chopped
  • 3 c. chicken broth
  • 1/4 c. dry sherry
  • 1/2 tsp. dried whole thyme
  • 1/2 tsp. dried whole marjoram
  • 1/2 tsp. pepper

    Combine all ingredients in a Dutch oven.

    Bring to a boil; cover, reduce heat and simmer for 45 minutes or until lentils are tender.
