- 1 cup finely chopped onion
- 1 garlic clove, minced
- 1 teaspoon canola oil
- 1 cup dry lentils
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 2 12 cups vegetable broth
- 1 cup salsa
Directions

1Saute the onion and garlic in oil until tender.

2Add the lentils, chili powder, cumin and oregano.

3Cook and stir for 1 minutes.

4Add broth and bring to a boil.

5Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender.

6Uncover and cook for 6-8 minutes or until mixture is thickened.

7Mash lentils slightly.

8Stir in salsa.
