  • 1/2 lb. lentils (1 c.)
  • 1 lb. spinach, chopped
  • 1 onion
  • 2 cloves garlic
  • 1 tsp. coriander
  • 1 tsp. turmeric
  • 1 tsp. cumin seed
  • 1/2 tsp. chili powder
  • lemon juice to taste
  • salt to taste

Directions

    Boil the lentils in 1 pint (2 cups) water until soft (about 25 minutes).

    Fry sliced onion and chopped garlic; add spices.

    Stir about 2 minutes.

    Add cooked lentils and washed and coarsely chopped spinach.

    Stir well.

    Simmer 10 to 15 minutes.

    Add salt and lemon juice.
