- 1 cup dry lentils, uncooked
- 3/4 cup chopped red peppers
- 1/3 cup chopped red onions
- 2 Tbsp. chopped fresh mint
- 3/4 cup KRAFT Zesty Italian Dressing
- 2 cloves garlic, minced
- 6 oz. Cotija cheese, crumbled
Directions

1Place lentils in saucepan.

2Add enough water to cover lentils by 2 inches.

3Bring to boil on medium-high heat.

4Simmer on medium-low heat 30 min.

5or until lentils are tender; drain.

6Transfer lentils to medium bowl.

7Add peppers, onions and mint; mix lightly.

8Refrigerate several hours or until chilled.

9Mix dressing and garlic until blended.

10Add to lentil mixture along with the cheese; mix lightly.
