  • 1/4 cups Olive Oil
  • 2 whole Onions, Chopped
  • 2 whole Carrots, Diced
  • 1 cup Lentils
  • 1- 1/2 teaspoon Ground Coriander
  • 1- 1/2 teaspoon Ground Cumin
  • 18 teaspoons Cayenne (red Pepper)
  • 3 cups Vegetable Broth
  • 1 can 14 Oz Can Diced Tomatoes (undrained)
  • Basmati Rice, Cooked, To Serve

    Heat oil in a large skillet over medium-high heat.

    Saute onions and carrot in oil for 3-5 minutes.

    Add lentils and spices.

    Stir to coat.

    Add broth and tomatoes.

    Bring to a boil.

    Reduce heat and simmer for 40-45 minutes.

    Serve over basmati rice.
