Lentils With Rice

  • 1 c. lentils (wash twice)
  • 1/3 c. rice
  • 1 tsp. salt
  • 1/4 Tbsp. black pepper
  • 1 large onion
  • 4 c. water
  • 1/2 c. olive oil

Directions

    Put water and lentils in medium-sized pot.

    Bring to boil. Cover and cook over medium heat for 20 minutes.

    Slice onions. Heat oil in skillet and add onions.

    Stir until golden brown.

    Add rice, salt and pepper to lentils and water and cook until rice is done, approximately 20 minutes.

    Add oil and onions.

    Cook for 5 minutes.

    Can be eaten warm or cold.
