Lentils With Rice

- 1 c. lentils (wash twice)
- 1/3 c. rice
- 1 tsp. salt
- 1/4 Tbsp. black pepper
- 1 large onion
- 4 c. water
- 1/2 c. olive oil
Directions

1Put water and lentils in medium-sized pot.

2Bring to boil. Cover and cook over medium heat for 20 minutes.

3Slice onions. Heat oil in skillet and add onions.

4Stir until golden brown.

5Add rice, salt and pepper to lentils and water and cook until rice is done, approximately 20 minutes.

6Add oil and onions.

7Cook for 5 minutes.

8Can be eaten warm or cold.
