Ingredients

  • 1 c. sugar
  • 1/2 c. oil
  • 2 eggs
  • 1 1/2 tsp. grated lemon rind
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/8 tsp. ginger
  • 1 c. lettuce, finely chopped
  • 1/2 c. nuts, chopped

Directions

    Beat sugar, oil, eggs and lemon rind.

    Add sifted flour, baking powder, salt, ginger and lettuce to sugar mixture.

    Beat well. Stir in nuts. Bake in greased 9 x 5-inch loaf pan at 375° for 55 minutes. Cool 15 minutes in pan. Remove and sprinkle with powdered sugar, if desired.
