Libby'S Corn Casserole

Ingredients
- 1/2 c. cut up bell peppers
- 1/2 c. cut up onions
- 1 stick oleo
- 1 can creamed corn
- 1 can whole kernel corn
- 2 eggs (Egg Beaters are fine)
- 1 box Jiffy corn bread mix
- 2 c. sour cream
- 2 c. grated cheese
Directions

1Saute peppers and onions in the hot oleo.

2Mix corn bread mix, eggs and both corns.

3Stir until all mix is moist.

4Add the peppers and onions.

5Pour into a greased oblong baking dish.

6Bake for 35 minutes in a 350° oven.

7Cover top with sour cream and grated cheese.

8Return to oven until cheese is melted.
