- 1 (8 oz.) light cream cheese (room temperature)
- 1 (8 oz.) no-fat cottage cheese
- 2 eggs or Egg Beaters equivalent to 2 eggs
- 3/4 c. sugar
- 1 tsp. vanilla
- 1 tsp. lemon flavoring
- 12 vanilla wafers
- 1 can cherry or blueberry pie filling
Directions

1Beat cottage cheese, Egg Beaters and sugar until smooth.

2Add cream cheese, vanilla and lemon flavoring.

3Continue to beat until smooth and creamy.

4Line a muffin pan with 12 cup cake liners. Place 1 vanilla wafer in each cup.

5Spoon cream cheese mixture on top of vanilla wafers.

6Bake at 375° for 15 to 20 minutes until set.

7Top with pie filling.
