Light Fruit Cake

  • 1/2 lb. or 2 sticks butter
  • 2 1/2 c. sugar
  • 6 eggs
  • 3 (1 oz.) bottles brandy flavoring
  • 4 c. plain flour
  • 1 tsp. nutmeg
  • 1 1/2 tsp. cinnamon
  • 1 tsp. salt
  • 1 lb. pecans
  • 3/4 lb. candied cherries
  • 3/4 lb. candied pineapple
  • 1 lb. white raisins

Directions

    Mix first 4 ingredients together.

    Add next 4 ingredients, then add the last 4 ingredients.

    Pour in aluminum tube pan, greased and floured.

    Bake for 3 hours at 275°.

    Half hour before cake is done, remove from oven and brush with honey or syrup.
