- 1 1/2 c. flour
- 2 tsp. baking powder
- 2 Tbsp. sugar
- 1/4 tsp. salt
- 1 1/2 c. skim milk
- 2 Tbsp. oil
- 2 egg whites
Directions

1Mix dry ingredients.

2Add skim milk and oil; mix well.

3Beat 2 egg whites until peaks form.

4Fold into batter mix.

5Spray griddle with Pam or other nonstick cooking spray.

6Heat.

7Cook pancakes as usual.

8Use lite margarine and syrup or better yet, apple butter or applesauce.
