- 1 unbaked 9-inch deep-dish pie shell
- 3/4 c. granulated sugar
- 1 Tbsp. cornstarch
- 1 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 2 egg whites
- 1 3/4 c. (16 oz. can) solid pack pumpkin
- 1 1/2 c. (12 oz. can) evaporated skimmed milk
Directions

1Prepare pie shell.

2Heat oven to 425°.

3Combine sugar, cornstarch, cinnamon, ginger and salt in small bowl.

4Beat egg whites lightly in large bowl.

5Stir in pumpkin and sugar mixture. Gradually stir in evaporated milk.

6Pour into pie shell.

7Bake at 425° for 15 minutes, lower temperature to 350° and bake 30 to 40 minutes or until knife inserted in center comes out clean.
