  • Lilac blossoms, little stems removed
  • Granulated sugar (in equal amount to lilac blossoms by volume)

    Process the blooms and the sugar in a food processor until the blooms are completely broken down.

    The sugar will be damp. Spread it out on a baking sheet and let it air dry completely, stirring it and breaking up clumps occasionally. The dry time will vary depending on the conditions in your kitchen, I left mine out for almost 2 days, then transferred it to an air-tight container.
