  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 1 medium onion, chopped
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. evaporated milk
  • 3 c. lima beans
  • 1 c. mushrooms
  • 2 Tbsp. butter, melted
  • fine bread crumbs
  • 1 c. liquid from mushrooms and beans

    Melt butter.

    Add onion; cook until tender.

    Blend in flour. Add salt, pepper and liquid; mix well.

    (If not enough liquid from mushrooms and beans, add enough water to make one cup.)

    Add evaporated milk; blend.

    Add beans and mushrooms; mix well.

    Place in buttered casserole dish.

    Mix the melted butter and crumbs; sprinkle over bean casserole.

    Bake, uncovered, at 350° until bubbly and crumbs are browned.
