Lima Bean Ham Chowder

- 1 1/2 c. large, dried lima beans
- 1 (1 lb.) meaty ham hock
- 1/2 c. chopped green pepper
- 1 c. chopped onion
- 1 (8 3/4 oz.) can cream-style corn
- 2 c. milk
- 1 qt. water
- 1 tsp. salt
- 2 Tbsp. melted butter or oleo
- salt and pepper to taste
Directions

1Combine beans and water; bring to boil and let simmer 2 minutes.

2Remove from heat; let stand 1 hour.

3Add ham hock; cover and simmer 1 hour or until meat is tender.

4Add 1 teaspoon salt; simmer 30 minutes.

5Saute onion and green pepper in butter until tender; add to lima beans along with ham, corn and milk.

6Heat thoroughly, but do not boil.

7Season to taste with salt and pepper.

8Yields 4 to 6 servings.
