Lima Bee Ice Cream

- 3/4 pound lima beans, fresh or frozen
- 3 cups milk
- 3 large eggs
- 2 tablespoons sugar
- 1 cup honey
Directions

1In a large pot, bring lima beans to a boil for 10 minutes to soften them.

2Remove the skins from the beans by hand or by pressing the beans through a colander or ricer.

3Puree bean pulp with half the milk in a blender until smooth.

4In the top half of a double boiler, combine the eggs, remaining milk and sugar.

5Heat, stirring, until steam rises.

6Do not boil.

7Remove from heat and stir in bean puree and honey.

8Strain mixture through a fine sieve.

9Cool thoroughly.

10Freeze in an ice-cream maker, following manufacturer's instructions.
