Lime Fruit Fantasy

   Oil mold.

   Dissolve gelatin in boiling water; add marshmallows and stir until melted.

   Add pineapple juice and chill until partially set.

   Remove from refrigerator and fold in whipped cream.

   Blend in crushed pineapple, cottage cheese and nuts and fill salad mold.

   Chill until set.

   Unmold on bed of lettuce leaves, kale or red lettuce leaves.

   Fill center with a small dish of thinned mayonnaise.
