  • 1 cup sugar
  • 1/2 cup canola oil
  • 1 tsp. vanilla
  • 2 tsp. lime juice with a few drops of lime oil
  • Grated rind of one lime
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 cups flour
  • 1/2 cup coarsely chopped candied ginger
