Lime Jello Salad

  • 2 (3 oz.) pkg. lime Jell-O
  • 1 Tbsp. vinegar
  • 1 (8 1/4 oz.) can sliced pineapple
  • 1/4 c. chopped celery
  • 2 c. boiling water
  • 1 1/4 c. cold water
  • 1/4 c. mayonnaise
  • 1 small sliced banana

Directions

    Dissolve Jell-O in boiling water.

    Add cold water and vinegar. Chill until thick (1 1/2 hours).

    Pour 1/2 cup of thick Jell-O into 9 x 5-inch loaf pan.

    Put 3 pineapple rings in 1 cup of thick Jell-O.

    Fold in banana slices and spoon into pan.

    Chill until set, but not firm, about 15 minutes.

    Blend mayonnaise in rest of Jell-O until smooth.

    Stir in celery and spoon into pan.

    Chill until firm, 4 hours or overnight.

    Unmold and slice.

    Serve on lettuce leaf.
