- 2-1/4 cups Sweetened Coconut Flakes
- 3 whole Limes, 1/3 The Zest, All Of The Juice
- 1/4 cups Confectioners Sugar
- 1/2 cups Coconut Milk (sweetened)

1Preheat oven to 350°F.

2In a mixing bowl, add sweetened coconut flakes, lime juice and zest, and mix to combine. Add confectioners sugar and mix again. Add sweetened coconut milk and mix to well incorporate.

3Scoop the mixture and drop into wells of a greased (or nonstick) 24-count mini muffin tin. Bake until golden brown, about 12-14 minutes. Let them remain in the tin wells until completely cool.

4Remove with a wooden spoon. Store in an airtight container.
