Lime Mousse

  • 1 stick butter
  • 5 eggs
  • 1 cup sugar
  • 6 or 7 limes (3/4 cup)
  • grated zest of 5 limes
  • 2 cups heavy cream

Directions

    Melt butter in microwave.

    Beat eggs and sugar in bowl until light and foamy. Add mixture to melted butter. Cook gently, stirring CONSTANTLY, until mixture becomes a custard, about 8 minutes. Do not overcook, or eggs will scramble.

    Remove custard from heat and stir in lime juice and zest. Cool to room temperature.

    Whip cream until VERY stiff; almost the consistency of butter. Stir lime mixture into cream until just incorporated. Pour into a serving bowl and let chill for at least 4 hours.
