- 1 stick butter
- 5 eggs
- 1 cup sugar
- 6 or 7 limes (3/4 cup)
- grated zest of 5 limes
- 2 cups heavy cream
Directions

1Melt butter in microwave.

2Beat eggs and sugar in bowl until light and foamy. Add mixture to melted butter. Cook gently, stirring CONSTANTLY, until mixture becomes a custard, about 8 minutes. Do not overcook, or eggs will scramble.

3Remove custard from heat and stir in lime juice and zest. Cool to room temperature.

4Whip cream until VERY stiff; almost the consistency of butter. Stir lime mixture into cream until just incorporated. Pour into a serving bowl and let chill for at least 4 hours.
