- 10 limes
- 1 kg coarse salt
- 500 ml olive oil (not virgin)
- 1 tablespoon turmeric
- 1 tablespoon cumin seed
- 3 dried red chili peppers (crumbled)
- 3 (350 ml) jars
Directions

1Cut limes into 8ths length-wise and cover bottom of a large dish with them.

2I use a big casserole dish.

3Cover with salt.

4Put into freezer overnight.

5Thaw completely.

6Put into colander and rinse under cold water.

7Shake dry.

8Put 1/3 into @ clean jar.

9Meanwhile, pour oil into measuring jug, stir in turmaric, cumin seeds and crumbled peppers.

10Pour oil to the very top of jars, limes MUST be covered.

11Leave in dark place for 3 wks.
