- juice of 1 lime
- 1/4 c. shallots, minced
- fresh ground black pepper to taste
Directions

1Arrange fillets on a steamer rack over boiling water.

2Squeeze the lime juice over them and top with shallots and black pepper. Cover and steam for about 5 minutes, until fish flakes easily with a fork.
