Lincoln Almond Cake

- 2 1/4 c. sugar
- 1 c. butter
- 3 c. flour
- 1 Tbsp. baking powder
- 1 c. milk
- 1 c. chopped, blanched almonds
- 1 1/2 tsp. vanilla or almond extract
- 6 egg whites, beaten with 1/2 tsp. salt
Directions

1Preheat oven to 350°.

2Mix together sugar and butter.

3Sift together flour and baking powder; slowly add to butter and sugar mixture alternately with small amount of milk.

4Mix thoroughly. Add chopped almonds and vanilla; mix thoroughly.

5In bowl, beat egg whites with salt until stiff; blend with other mixture.

6Pour into greased and floured angel food pan or Bundt pan.

7Bake for approximately 1 hour, or until a toothpick comes out clean.

8Cool upside-down on a wire rack.
