  • 1/2 package RONZONI HEALTHY HARVEST Linguine, uncooked
  • 1 tablespoon olive or vegetable oil
  • 1 clove garlic, minced
  • 1/2 teaspoon dried basil leaves
  • 4 cups (about 1 pound) chopped fresh broccoli
  • 1/2 cup dry sherry or ready-to-serve chicken broth
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon ground black pepper
  • 1 cup low-fat cottage cheese
  • 1/4 cup grated Parmesan cheese

Directions

    Cook pasta according to package directions. Meanwhile, in large skillet, heat oil. Add garlic and basil; cook 1 minute. Add broccoli, sherry, parsley and pepper; cook, stirring constantly, until broccoli is tender. Remove from heat; stir in cottage cheese. Toss hot pasta with broccoli mixture; sprinkle with Parmesan cheese.
