Linguini With Shrimp

  • 1/4 c sliced shallots
  • 2 Tbsp olive oil
  • 1 can 14.5 oz diced tomatoes in olive oil, garlic and spices
  • 1Tbsp chopped fresh basil
  • 1/3 c heavy cream
  • 1/2 lb cooked shrimp
  • 1/8 tsp cayenne pepper
  • 6 oz linguini, cooked, hot
  • 1/3 c julienned basil leaves

Directions

    In a skillet, over medium- high heat, saute shallots in oil for 4 minutes or until soft. Add tomatoes and 1Tbsp basil; simmer 5 minutes. Add cream; boil 2 - 3 minutes to thicken. Add shrimp and cayenne. When hot, toss with pasta and julienned basil.
