- butter or margarine
- graham cracker crumbs
- 3 eggs, separated
- 3/4 c. sugar
- 2 (8 oz.) pkg. cream cheese, softened
Directions

1Butter 1 1/2-inch muffin tins and coat generously with graham cracker crumbs; set aside.

2Cream the egg yolks, sugar and cream cheese until fluffy.

3Beat egg whites until stiff and fold into cream mixture.

4Spoon cream cheese mixture into muffin tins.

5Fill about 3/4 full.

6Bake at 350° for 20 minutes.

7Cool 10 to 15 minutes (centers will fall, foamy and indented).

8Carefully remove from muffin tins.

9Spoon 1 teaspoon Sour Cream Filling into center indention.

10Store in refrigerator.

11Makes 48 servings.
