- 1/2 c. fruit preserves or marmalade
- 16 slices sandwich bread, crust removed
- 3/4 c. buttermilk pancake and waffle mix
- 1 tsp. sugar
- 1/4 tsp. nutmeg
- 1 egg
- 3/4 c. milk
- hot vegetable oil
- powdered sugar
Directions

1Spread preserves over each slice of bread.

2Roll up, jelly roll fashion.

3Tightly wrap each bread roll in plastic wrap. Chill for several hours or overnight.

4Combine pancake mix, sugar and nutmeg; mix well.

5Add egg and milk, mixing until smooth.

6Dip each bread roll into batter.

7Deep-fry in hot oil until golden brown.

8Drain on paper towels; sprinkle with powdered sugar. Serve warm with additional preserves or marmalade, if desired. Yield: 1 1/2 dozen.
