- 1 c. cooked rice
- 1/3 c. butter or margarine
- 1/3 c. lemon juice
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 (10 oz.) pkg. frozen broccoli, thawed and drained
- 4 oz. shredded Cheddar cheese
- 8 fish fillets (about 2 lb.)
Directions

1Preheat oven to 375°.

2Melt margarine.

3Add lemon juice, salt and pepper.

4In bowl combine rice, broccoli, cheese and 1/4 cup lemon sauce; mix well.

5Divide broccoli mixture equally among fillets.

6Roll up and place, seam side down, in shallow 2-quart baking dish.

7Pour remaining sauce over roll-ups.

8Bake 25 minutes or until fish flakes with fork.

9Spoon sauce over individual servings.

10Garnish with paprika.
