Liver Dumplings

- 1/4 lb. beef liver
- 2 Tbsp. butter
- dash of salt
- dash of pepper
- 1 egg
- 1/2 clove garlic, crushed, or pinch of marjoram
- 1 1/2 c. bread crumbs (approximately)
Directions

1Grind liver. (I use blender.)

2Cream butter with salt and egg. Add balance of ingredients; mix into a stiff dough.

3Form into balls, each the size of a walnut.

4Test dough by boiling just one dumpling at first to make sure it does not fall apart; if dough is not thick enough to adhere, add more bread crumbs.

5Simmer dumplings 3 to 5 minutes.

6Serve with soup.
