Liver Pate

  • 1 large onion, chopped
  • 1/4 lb. butter
  • 1 lb. chicken livers
  • 6 to 8 hard-boiled eggs
  • 2 to 4 Tbsp. salad dressing

Directions

    Saute onion in butter until transparent.

    Remove onion and add livers.

    Saute slowly until just cooked through, but not brown. Remove livers from butter and cool.

    Reserve butter.

    Mash livers with fork or sturdy pastry blender.

    Mash or grind egg.

    Combine mashed livers, eggs, onion and butter.

    Add just enough salad dressing to make a firm paste. Form into ball and refrigerate. Serve with miniature rye slices or crackers.
