  • 1 large can V-8
  • 1 eggplant (small), cut in 1-inch cubes
  • 8 oz. mushrooms, sliced or diced
  • 1 c. green beans
  • 1 small potato, diced (can substitute this with water chestnuts)
  • 2 carrots, sliced thin
  • 2 chicken breasts, meat cut into small pieces

Directions

    Add vegetables and meat to crock-pot.

    Add V-8; season with oregano or Italian seasoning or your favorite spice combo.

    Cook on slow/low crock-pot setting for 6 to 8 hours.

    Serve in large soup bowls.
