- 1 large can V-8
- 1 eggplant (small), cut in 1-inch cubes
- 8 oz. mushrooms, sliced or diced
- 1 c. green beans
- 1 small potato, diced (can substitute this with water chestnuts)
- 2 carrots, sliced thin
- 2 chicken breasts, meat cut into small pieces
Directions

1Add vegetables and meat to crock-pot.

2Add V-8; season with oregano or Italian seasoning or your favorite spice combo.

3Cook on slow/low crock-pot setting for 6 to 8 hours.

4Serve in large soup bowls.
