  • 4 c. grated carrots (spooned, not packed, into cups)
  • 2 c. sugar or 3 or 4 pkg. artificial sweetener or part of each
  • 1 can crushed pineapple, drained
  • 1 c. prune puree (recipe follows)
  • 4 large egg whites
  • 2 tsp. vanilla
  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 c. raisins (optional)
