Loaded Mashed Potatoes

Ingredients

  • 8 medium potatoes
  • 3 -4 garlic cloves
  • 1 (8 ounce) packagediced portabella mushrooms or 1 (8 ounce) packagecommon mushrooms
  • 2 tablespoons extra virgin olive oil
  • 3 -4 green minced green onions
  • 1 cup sour cream
  • 14 cup milk
  • 12 cup butter
  • 6 slices turkey bacon (diced)
  • 1 12-2 cups shredded sharp cheddar cheese
  • salt (to taste) or garlic salt (to taste)
  • black pepper (to taste)

Directions

    Peel and quarter potatoes and place in large pot with just enough cold water to cover and 1/2 teaspoon salt.

    Over high heat, bring to a boil; lower heat to medium low and cook, covered, until very tender, about 20 to 25 minutes.

    While potatoes are cooking, saute the olive oil, garlic and diced mushrooms until soft.

    reserve off to side until potatoes are done.

    Drain water from cooked potatoes.

    Mash the potatoes, working out all the lumps and adding in the butter, sour cream, milk until desired consistency is obtained.

    Add remaining ingredients and ensure the ingredients are thoroughly mixed together.

    Salt and pepper to taste, Garlic salt optional vs table salt.
